Ultimate Fathead Pizza Recipe

I still don’t know why this is called Fathead dough, but of all the variations that I’ve experimented with this version has been my most successful.

This pizza comes out with a remarkably crispy crust and will definitely satisfy your hunger for pizza while skipping the carbs.

Ultimate Fathead Pizza Recipe

Ingredients

  • Pizza Dough
  • 1 1/2 cups Shredded Mozzarella Cheese

  • 2 tbsp Cream Cheese

  • 3/4 cup Almond Flour

  • Toppings
  • 1/4 cup Pizza Sauce

  • 8 ounces Shredded Mozzarella Cheese

  • Choice of toppings

Directions

  • Preheat pizza stone or cookie sheet in the oven at 450 degrees.
  • Combine mozzarella and cream cheese in microwave-safe bowl. Microwave for 15-30 seconds at a time until melted. Stir to fully incorporate the cheeses.
  • Add the almond flour to the cheese and mix with your hands until it forms a well-blended ball of dough.
  • Place the pizza dough on a large piece of parchment paper. Place another large sheet of parchment paper on top of the dough and use a rolling pin to flatten it out into a large circle. (Save the second piece of parchment paper, you’ll need it later)
  • Using your hands try to pinch the edges of the dough so that there will be a slightly thicker crust.
  • Poke holes in the dough before carefully placing the pizza with the parchment paper on the preheated pizza stone, or baking sheet. Bake for 8-10 minutes until it is golden brown and crusty.
  • After removing the pizza from the oven, place the second sheet of parchment paper on top of it and flip it over.
  • Spread a thin layer of sauce on the dough and then top with the remaining cheese and any additional toppings.
  • Place the pizza back in the oven to bake for 3-5 minutes minutes until the cheese melts.
